    Site navigation...

I'm tempted to throw in some Java menus onmouseover my links, but I am under the impresson that the more clicks it takes to get someplace in the sithe the better it is for your ratings. Should I avoid java menus or should I stick to simple navigation if the site is already easy to navigate?

text links are always better for content sites that rely on search engine listings for traffic.

You can though get a graphical look on a text link if you follow the guide in this article:

What about the scripts that pop up a menu to the side of the link that is navigable (like the "Start" menu) to other sub-headings?

Those are a bad idea. They're almost always javascript driven and search engines do not process javascript so search engines would not even be able to find your pages linked to off your menu.

    css to mimic roleover

You can use CSS to make text links more dynamic. It's not going to be a graphic but there will be more emphasis on a given link, menu, etc. when the mouse covers the text.

Also much lower K and easier to update

You can use CSS to make an image rollover link.
