I want to set up an e-commerce site selling various (somewhat unrelated) products. Is there any advantage (or disadvantage) to setting up multiple sites with links to the other sites, rather than having all the products on one site? I'm thinking it may be useful to take visitors to the page they need, rather than making them drill down several layers to get what they want.

No, do one site.

I recommend the multiple site setup if you're going to have a content site and a related ecommerce site and want to cross promote.

But multiple ecommerce sites selling the same product is usually not a good idea. Especially when starting out.

It is much better to concentrate it in one site only.

Besides, creating several websites and interlinking them with each other might not be a great idea for rankings too.

...and you can be more focused in promotion when doing all in one site.

You spend more time, money, effort in setting up multiple sites. A single and well organize site would suffice.

My advice is to just categorize the products properly for easy navigation on the part of your users.

Having one site is also better SEO-wise. You get to focus more on a single site than optimizing for several ;)
