They use extremely different algorithms for searching and filtering content.

Google is very quick to update and reorganize it's listings (sometimes as quickly as a few hours), and takes into account quality of content, location, keywords, usability. They also actively track if their recommendations are relevant, and update accordingly.

Bing seems to still suffer from responding to link spam, is slow to update (up to 6 weeks before a change is reflected in their search engines), but puts a lot of weight on the social weight of a particular site or search term.

Biggest difference in the Contextual Search feature in Bing.

e.g. Search for a prominent person on Bing lets say by using this keywords: 'who is lance armstrong?'
Then search again for lets say his birthdate using the keywords: 'when was he born?'
Bing will give you the birthdate for Lance Armstrong and not a random search on birth dates.
