White-hat SEO - Needs more effort and skill to acquire result. These efforts and your money will never lose as Google and other search engines will love your website. You are safe from any future updates from them. Go ahead with only white-hat methods if you have created your website for long run.

Black-hat SEO - You are doing something illegal/ not approved methods for ranking your website. No major skills or efforts required to get result from black-hat methods. But it is damn sure that, Google will caught and penalize your website. You have to do more efforts than white-hat methods to recover from such penalties.
